Caption: Lactobacillus bacterium. Coloured transmission electron micrograph (freeze-fracture technique using metal shadowing) of the bacterium Lactobacillus bulgaricus. In freeze-fracturing a specimen is frozen and then fractured to expose the surface. The bacterium is rod-shaped, positioned diagonally across the frame. The area coloured green is where the bacterium was broken off by the freeze-fracturing process. Above the break the texture of the inside wall of the bacteria can be seen. L. bulgaricus produces lactic acid from sugar. It is used commercially in the production of buttermilk and yoghurt. Magnification x12,800 at 35mm size.
