Caption: Salmonella. Coloured transmission electron micrograph (TEM) of a Salmonella sp. bacterium, a contaminant of food that causes food poisoning. The bacteria lodge in the intestines and multiply rapidly. The breakdown of the bacterial cells releases a toxin. In humans this causes gastroenteritis, which has the symptoms of vomiting, diarrhoea and headaches. A rod- shaped bacterium, Salmonella sp. moves by means of its flagella, the long flowing filaments shown around its body. The number of flagella varies according to the species.
