Caption: E. coli H157:07 bacterium. Coloured scanning electron micrograph (SEM) of an Escherichia coli H157:07 bacterium, a cause of food poisoning. This strain of E. coli produces a powerful toxin that causes abdominal cramps and bloody diarrhoea, with kidney failure occurring in extreme cases. It can live in the intestines of healthy cattle, and is spread during the milking and slaughter processes. Another source of infection is sewage- contaminated water. Pasteurisation of milk and the thorough cooking of meat help to prevent its transmission. Magnification unknown.
