Caption: Canning kitchen, 19th century artwork. Here, the food was cooked before being sealed in cans. The process of canning was a method of food preservation developed in the early 19th century for the French armies during the Napoleonic Wars. The process was improved and increasingly mechanised during the 19th century, becoming a vast industry. Engraving from 'Grands Hommes et Grands Faits de l'Industrie' (Great Men and Great Facts of Industry), published in France circa 1880.
