Caption: Yeast cell. Coloured Transmission Electron Micro- graph (TEM) of a section through a budding yeast cell, Saccharomyces cerevisiae. Known as Baker's or Brewer's yeast, this fungus consists of single vegetative cells. The larger "mother" cell (at left) is budding off a daughter cell (top right) in the process of cell division. Storage granules (black) are seen in each cell; a vacuole (blue) is visible in the daughter cell. Saccharomyces cerevisiae is able to ferment sugar, producing alcohol and carbon dioxide in the process. It has long been used in the brewing of beer, production of wine, and in baking leavened bread (causing dough to rise). Magnification: unknown.
