Sturgeon are hugely important to the economy of many parts of Russia. In addition to the flesh, which is smoked or cured, the ovaries of the sturgeon are the source of caviar. Chronic over-fishing and pollution have brought wild sturgeon to the edge of extinction, so farming has taken over as the dominant source of the fish.
