Caption: Enhanced scanning electron microscopy (SEM) of four yeast cells in the body of kefir, a creamy drink made of fermented cow's milk (Magnification 3900x). Microorganisms, consisting of bacteria and yeasts, metabolize the milk sugar (lactose) and produce lactic acid, which coagulates the milk. The yeasts provide carbon dioxide, which produces a small amount of alcohol in the kefir.
