Caption: Color-enhanced scanning electron micrograph (SEM) of a piece of long-grain rice. It was fractured to reveal protein bodies and the fracture was examined by scanning electron microscopy (SEM). Protein bodies (orange color) were found between tightly packed starch granules. When removed, the protein bodies left behind dimples - their imprints in the starch granules. Enhanced SEM. Image width: 28.5 micrometers. Magnification: 3,500x if the image is printed 10 cm wide.
