Caption: Mucor sp. Mould, Mucor sp., growing on jam. This fungus produces spores which are carried by the air. If a spore settles on damaged or moist food, it germinates producing a mass of filamentary hyphae. The hyphae penetrate the food to obtain nourishment, to form an indistinct fibrous mass called the mycelium. Specialised hyphae grow up from the mycelium creating erect stalks, at the top of which grow round fruiting bodies (sporangia). Eventually the walls of the sporangia rupture, releasing new spores into the air.
