Caption: Frost-damaged apples. The brown bruises on these apples are caused by damage to the living tissue by frost. Frost causes ice crystals to grow inside the fruit, rupturing cell walls and releasing enzymes that break down tissue in the affected area. Frost damage further promotes decay by exposing the deteriorating tissue to airborne fungi and bacteria.
