Goats (Capra sp.) have been domesticated for several millennia, and were formerly used for both milk and meat production before the introduction of the cow. Goat's milk has a lower fat content, is easier to digest and contains smaller amounts of casein & lactose than cow's milk. As a result it has become popular in the health food market and with those suffering from a milk intolerance. Goat's milk is also made into goat's cheese
