This introduced species is being farmed for its meat and its eggs, which are eaten pickled as caviar. The age and sex of the fish will be checked to ensure that enough young fish are left to reach sexual maturity and produce caviar. A. baeri grows more rapidly than A. sturio, the native sturgeon species in this part of France. A. baeri is native to rivers in Siberia. Photographed at Saint-Fort-sur-Gironde, France.
