Caption: Horse-drawn plough. Villagers using a horse-drawn plough to prepare a field for planting potatoes (Solanum tuberosum). Potatoes are an underground part of the plant, a structure called a tuber that stores reserves of starch, a type of carbohydrate. This makes potatoes a good source of carbohydrate, providing energy in the diet. Photographed in July 2003, in the Kursk region of Russia.
