Caption: Ripe tomatoes. Crop of ripe tomatoes Lycopersicon esculentum. Tomatoes are one of the most important vegetables in most regions of the world, ranking second in importance to potatoes. The red fruits are eaten raw or cooked, and are used to produce soup, juice, sauce, ketchup, puree, paste and powder. They are used extensively in the canned industry, while green tomatoes are used for pickles and preserves. Tomato seeds contain 24% oil and this may be extracted for use in salad oils and in the manufacture of margarine and soap. The pulp of tomatoes is used for stock feed and fertilizer.
