Caption: Organic amaranth. Amaranth is a crop of South American origin. Several species of the genus Amaranthus are used in agriculture. Amaranth can be harvested for its grain, or its leaves can be eaten as a green vegetable. The grain is high in protein, minerals and beneficial lipids. It is harder to grow and harvest than crops such as wheat, although it needs little fertiliser. Much of its production in the developed world is for the specialist health food market. Organic farming aims to reduce the use of artificial substances and exclude genetic modification.
