Caption: Fermentation vat. Vessel for the fermentation of microorganisms. Vessels like this are used to grow yeast, Saccharomyces sp., including genetically- engineered varieties. Yeast, a type of fungus, has a number of uses. It can be grown as a food for humans or animals, as a source of B vitamins (especially vitamin B1 or thiamine) or alcohol, and as a stage in the production of various steroid hormones and antibiotic drugs. Yeast cultures are grown in a solution of water containing sugar, nitrogen sources and minerals. Yeast can live in both oxygen-rich and oxygen- deficient conditions.
