Caption: Skim milk powder manufactured by spray-drying. The skim milk is first evaporated to increase the solids contents and then atomised into minute droplets in a drying tower. The drying droplets interact with each other. Smaller, already dry globules, may become lodged in the still soft large particles or they may ricochet and leave dimples in the large particles (both examples can be seen in this micrograph). Enhanced SEM. Image width: 213 micrometers. Bar: 50 micrometers. Magnification: 470x if the image is printed 10 cm wide.
