Caption: Rock samphire. Rock samphire plants, Crithmum maritimum, growing in crevices between boulders. The growing leaf tips of this herbaceous plant have culinary, pharmaceutical and cosmetic uses. They can be boiled and pickled with salt, vinegar and spices for use as a food. The plant essence has a strong fragrance and is used in the perfume industry. A few drops of the essence may also be added to food as an aid to digestion. The plant's useful parts are gathered in May. The rock samphire grows wild in parts of southern Britain and Europe, particularly in coastal habitats. Photographed in Brittany, France.
