Caption: Sprouting potatoes (Solanum tuberosum), showing development of roots. S. tuberosum is a native of the high valleys of Mexico, Peru and Chile, being introduced to Europe in about 1565. It is now one of the most important temperate food crops. The leaves, stem and fruit of S. tuberosum contain a poisonous alkaloid, solanin. Although traces of this appear in the edible tubers, it is destroyed during cooking.
