Caption: False-colour scanning electron micrograph of the mucosa of the stomach, showing the gastric epithelial cells (orange/brown) surrounded by droplets of mucus (yellow). The mucus is a viscous fluid which acts as a protective barrier over the membrane. Food which enters the stomach is broken down into polypeptide fragments by the action of gastric juices released into the lumen.
