Evaporation of water. Steam rises from the mouth of a kettle during the process of vaporization. Also known as evaporation, water molecules enter a gaseous phase to form water vapour when heated to a temperature of 100 Celsius. It is a process of gasification of the liquid phase, as molecules of water become less closely packed and highly energetic with the rise in temperature.
