Caption: Parsley is is a popular herb of South European origin. Its leaves are widely used in cooking. The strong scent of parsley leaves overcomes even the scent of garlic. The Hamburg or turnip-rooted parsley is grown for its enlarged fleshy taproot. Parsley is apparently fatal to small birds and a deadly poison to parrots but is highly attractive to hares and rabbits. Parsley has carminative, tonic and aperient properties. But is chiefly used for its diuretic properties. A strong decoction of the root has been used to help treat kidney stones, congestion of the kidneys, dropsy and jaundice. The dried leaves have also been used for the same purpose.
