Caption: Achiote fruit (Bixa orellana). These spiny capsules contain inedible seeds, which are harvested for the pigment annatto (also called bixin). The pigment is extracted by stirring the seeds in water and is used to colour food products such as cheese, fish and salad oil. This plant is found in the tropical region of the American continent. It is also cultivated in Southeast Asia, where it was introduced from Spain. Photographed in Ecuador, South America.
