Caption: Dissolution of a sugar cube in water. The patterns seen below the sugar cube are made by the denser sugar solution forming a stream running toward the bottom of the vessel. As this stream moves through the body of water, viscosity and drag effects cause the formation of vortices. The flow of sugar solution has been visualised by the difference in refractive index 'bending' the transmitted light by differing amounts, a technique sometimes referred to as direct Schlieren imaging.
