If light and porous (leavened) bread is to be made (as here), then yeast is added as well. As the bread is warmed the yeast begins fermenting. The yeast produces carbon dioxide gas which cause tiny bubbles to appear in the dough mixture. Leavened bread can also be made by adding a chemical such as baking powder. The bread is baked and is then ready for consumption.
