Food additives research. Female researcher tasting naturally-occurring chemicals from food by brushing them onto her tongue. The taste of each will be described exactly by the researcher. This taste is compared to the flavour of the original food to see if it is one which contributes to the flavour. Of the hundreds of chemicals that can be extracted from food, only a few are responsible for its taste. Those chemicals which make up a component of the flavour can be manufactured to make artificial flavours to be added to food. Photographed in France.
