Fruit preserve manufacture. Technician preparing frozen strawberries before processing. Fruit preserve or jam is made from whole fruit boiled to a pulp with sugar. Using frozen fruit, which can be stored without spoiling for longer than fresh fruit, allows the factory to make preserves with fruits that are out of season, all year round.
