Caption: Fantesk starch product systhesis. Chemist making Fantesk, a natural product consisting of starch, water and oils that can be used to produce low-fat ice cream, cakes and cheese. The chemist, George Fanta, is a co- inventor of Fantesk who works for the US Department of Agriculture's Agricultural Research Service. He combines starch and oil in superheated steam under pressure to produce a gel with a greasy texture. The gel can then be used to make various foods which have a lower fat content than the original varieties.
