Caption: Oil and vinegar emulsion. This mixture is the basis of the vinaigrette salad dressing. An emulsion is a mixture of two materials that don't truly mix. Unless the emulsion is stabilised, the oil and the vinegar will eventually separate out. Even when emulsified, as here, the vinegar (dark brown) forms small drops within the oil (orange).
