Caption: Olive oil production. Extra-virgin (unrefined) olive oil released from olives being crushed at an olive oil factory. This traditional method uses stone mill wheels to crush the olives. Extra-virgin olive oil comes from the first pressing of the olives, contains no more than 0.8 percent acidity, and must not have been refined. Photographed in the Brague mill, Opio, France.
