Caption: Bird egg white protein, molecular model. This is a deglycosylated form of the egg white glycoprotein avidin, obtained from a chicken (Gallus gallus). This model was obtained during a study of the protein bound to biotin (vitamin B7). This protein's affinity for vitamin B7 means it is used in tests developed to detect both biotin and biotin-labelled protein or nucleic acid molecules.
