Caption: Sodium acetate crystallizing. Crystal growth in a super-saturated solution of sodium acetate. This solution can cool to room temperature without forming crystals. Adding a nucleation centre causes the solution to crystallize into solid sodium acetate trihydrate (white). The bond-forming process of crystallization is exothermic, producing heat. This process is used in chemical hand warmers.
