Caption: A molecular model of cysteine, an amino acid synthesized in the human body and also found in high protein foods such as chicken, pork, turkey, eggs, dairy, oats, broccoli and onions. Cysteine has the ability to form disulfide bonds, cross linking proteins and supporting a protein's tertiary structure. Cysteine has also been utilized in food manufacturing to create certain types of flavours as well as used as a flour treatment agent for baking. Atoms are coloured dark grey (carbon), light grey (hydrogen), red (oxygen), blue (nitrogen) and yellow (sulphur).
