Caption: Polarised light micrograph of crystals of tartaric acid. Large quantities of tartaric acid & smaller amounts of malic acid are present in grapes which during the wine making process become tartaric salts. These can be crystallised out from a sample of wine. Most other fruits contain citric acid rather than tartaric acid. Magnification: x11 at 35mm size.
