Caption: Scanning electron micrograph of anhydrous caffeine crystals. These were produced by sublimation, that is, by heating the solid until it is vapourised, then condensing the vapour. This drives all water out of the structure resulting in anhydrous crystals. Caffeine (chemical name 1,3,7- trimethylxanthine) is used as a stimulant; it acts on the central nervous system increasing alertness and deferring fatigue. It is often contained in analgesic preparations with aspirin or codeine, and it also has diuretic properties. It occurs naturally in coffee beans, tea leaves and cola nuts. Magnification: x80 at 8x10 inch size.
