Caption: Computer contour plot of the COSY (Through Bond) nuclear magnetic resonance (NMR) spectrum of Ribonuclease-B, an enzyme. The "peaks" in blue and red are due to interactions between protons on adjacent carbon atoms within the molecular structure. Enzymes are biochemical catalysts, proteins that speed up the rates of chemical reactions within cells; each enzyme is specific for a particular reaction. Photographed in the Glycobiology Unit at Oxford University, where research into the body's sugar chemistry and its relationship to disease is performed.
