Caption: Valine. Molecular model of the amino acid valine. Its chemical formula is C5.H11.N.O2. At right, the thickened region between the carbon and upper oxygen atom represents the electron distribution in a double bond. Amino acids are the building blocks of proteins. Valine is an essential amino acid. It cannot be synthesised by the body and so needs to be obtained from food. Foods high in valine include cottage cheese, fish, poultry, peanuts, sesame seeds, and lentils. Valine is important in muscle metabolism, repair and growth of tissue, regulating blood sugar levels, and providing the body with energy.
