Caption: Natural pH indicator. Three flasks containing chemicals of different pH (hydrogen ion concentration), revealed using an extract of red cabbage. The red cabbage (Brassica oleracea var. capitata) contains a chemical called anthocyanin. In acidic solutions this appears red or pink, in alkaline solutions it appears blue or purple, and in neutral solutions it appears pale green or yellow.
