Caption: Citric acid. Polarised light micrograph of crystals of citric acid. Also known as tricarboxylic acid, this chemical is found in citrus fruits, beets, cranberries and other acid fruits. It is manufactured by fermentation of sugar. In biology, it forms a major part of the Krebs Cycle (or citric acid cycle). This is of fundamental importance in the production of energy and the formation of complex cell constituents. Citric acid is also used extensively in the soft drink and food industries.
