Caption: Harvested olives. Pile of ripe olives and foliage after being dislodged from an olive tree by shaking (see image C026/1849). Olives are obtained from the olive tree (Olea europaea). They can be eaten as a fruit, or used to produce olive oil. The oil, used in cooking and to flavour salads, is high in mono-unsaturated fats. Photographed in Italy.
