Each type of epithelial tissue is highly specialized; histologists classify them according to the number of layers of cells and the shape of the cells at the apical surface. Single layers are called simple epithelium. These cells are always found in areas that require diffusion, absorption and secretion. They can be flat in shape or tall and offer little protection against mechanical abrasion. Stratified epithelium have two or more layers. Their main function is protection. (with titles).
