Caption: Vitamin A. Polarised light micrograph graphic of crystals of vitamin A. This is a fat-soluble vitamin essential for normal growth, for bone and teeth formation, night vision, and protecting against infection. Vitamin A is found in animal foods such as liver, fish-liver oils, egg yolk and dairy products. It is absorbed by the body in the form of retinol. Carotene, from sources such as green vegetables and fruits, is converted into vitamin A in the liver. Vitamin A deficiency may lead to weight loss, growth problems, dry eye (xerophthalmia) which can result in blindness, and keratinisation of epithelial tissues. An excess of vitamin A can also be harmful.
