Caption: Hardboiled hen's egg yolk was examined in hydrated state (no fixation, no dehydration, no gold coating) by environmental SEM (ESEM). The hard-boiled egg yolk has a granular structure noticeable even by a naked eye. The granules appeared to be tightly packed to form a compact mass. Cutting the yolk with a blade revealed the granules and, thus, showed the microstructure of the boiled yolk. All lipids present in the hen's egg are concentrated in the yolk. The environmental scanning electron microscope or ESEM is a scanning electron microscope that allows for the option of collecting electron micrographs of specimens that are wet, uncoated, or both.
