Caption: Scanning electron microscope of stone milled dark rye flour (Secale cereale). Large round discs are starch granules, and the minute globules are protein bodies, which may leave imprints in the form of dimples in the starch granules. Large bran particles are visible in this area as thin sheets since the microscope was taken at a relatively high magnification. A lower magnification was required to view such entire particles. Bar: 50 mg. Image width: 366 micrometers. Magnification: 273x if printed 10 cm wide.
