Caption: Celery fruit. Coloured scanning electron micrograph (SEM) of the dried fruit, often referred to as 'seeds', of the celery plant (Apium graveolens). Celery belongs to the apiaceae family of plants which includes carrots, coriander, dill, parsley and many other important food crops. Celery seeds are used as a spice whole or ground for flavouring and seasoning food. An aromatic oil is extracted from the seeds and used in the perfume and pharmaceutical industries. Magnification: x45 when printed 10 centimetres wide.
