Caption: Light micrograph (LM) of Vitamin C (ascorbic acid) and sucrose crystals. Ascorbic acid is an organic acid found in citrus fruits and an antioxidant also known as vitamin C. Primates (including humans) and a few other species, such as the guinea pig, cannot synthesize vitamin C from glucose, resulting in the deficiency called scurvy. Ascorbic acid is a natural preservative. Sucrose is the chemical name of table sugar. Sucrose is a disaccharide; each molecule consists of two simple sugars (a glucose and a fructose), called monosaccharides. Sucrose is generally extracted from sugar cane or sugar beet and then purified and crystallized. Pure sucrose is the most common sweetener in the world. Magnification: x40 when shortest axis printed at 25 millimetres.
