Z. bailii formerly known as Saccharomyces bailii is a yeast that is involved in food and beverage spoilage. Shown here are yeast cells reproducing asexually by multilateral budding. The buds can arise from various sites on the cells. Z. bailii has caused significant economic losses to the food industry. A wide range of acidic and high sugar products such as fruit concentrates, wines, soft drinks, syrups, ketchup, mayonnaise, pickles and salad dressings are susceptible to spoilage, but they are considered to have a stable shelf life. Z. bailii possesses the most significant and diversified resistance characteristics enabling it to survive and proliferate in very extreme conditions. Magnification: x800 when shortest axis printed at 25 millimetres.
