This work is being carried out by Bernard Descotte (left), a professor and surgeon at the University Hospital of Limoges, France. Honey has an antibacterial effect because it is hygroscopic, depriving bacteria of the moisture they need to survive and also increasing the acidity of the environment. Honey also helps to promote the flow of lymph fluid through the wound, speeding the healing process.
