Food starts to be broken down in the mouth by saliva from these glands. It then moves down the oesophagus (gullet) into the stomach. Enzymes break down food in the stomach and small intestine (coiled, lower centre) to release nutrients. These are absorbed into the blood and the lymphatic system through the intestinal linings. Water is reabsorbed in the large intestine (wrapped around the small intestine). Other organs and systems shown here include the liver (brown), the gallbladder (green) and the pancreas (yellow, behind the stomach). These also play roles in digestion, producing or storing digestive fluids.
