Caption: Potato starch grains. Polarised light micrograph of a transverse section through a potato tuber (Solanum tuberosum), showing the starch grains. A central cross, called the hilum, marks the highest point of a starch grain. When viewed by polarised light they exhibit double refraction (anisotrophy) and show the characteristic dark cross of colours (blue-red and yellow-green) traversing the starch grains. Magnification: x230 when printed at 10 centimetres wide.
